Job Description

Director of Food & Beverage – Indian Ocean

Our client who is based in the Indian Ocean, and who manages a stunning 5* Luxury Resort with multi restaurants is currently looking for a Director of F&B to join their team. As Director you will be responsible to effectively manage the daily F&B operations while providing the support, training and guidance to the team of the division in order to ensure maximum guest satisfaction. You will oversee the implementation of standards as per policy & procedure and manage operations ensuring the highest quality and standard. You will anticipate market changes, review operations when necessary and will handle guest complaints professionally.


• Participate in preparation of the Resorts strategic and marketing plans. Prepare the Food and Beverage Departmental budget.
• Ensure that all the Food & Beverage Standards are being adhered to. Ensure that the departmental SOP’s are updated and in line with the service standards.
• Oversee both operational and financial aspects of all operations within F&B division to ensure that all services extended are in accordance with the standards
• Ensure that departmental P&L is maximised
• Supervises the restaurants managers, room service & bar managers to ensure that daily operations in F&B Division run smoothly, the service is in accordance with guest expectations
• Coordinate and monitor contractors and suppliers to ensure that services and goods delivered are up to hotel expectations and do not jeopardise hotel standards
• Maintain visibility in order to ensure smooth running and to promote good public relations
• Prepare and complete action plans
• Identify trends, determine improvements & implement change
• Organize and conduct departmental meetings well as conducting monthly training sessions
• Control the appropriate and safe usage of food and beverage items and service equipment
• Ensure that the physical facilities and equipment are well kept and that all health and safety regulations are adhered to
• Manage and control stock
• Strong attention to detail. Good follow up skills.
• Previous experience as a Director/Manager of F&B in 5* Hotel/Resort
• Ability to manage all F&B ~ multi outlets plus large banqueting
• Directs and manages all food and beverage activities to maximize revenue, profitability and quality goals by developing and executing marketing strategies, up-selling strategies, controlling costs and by providing quality service and products to guests.
• Develop with the Sales and Marketing team, advertising and promotional campaigns in order to increase the market awareness and penetration of the food and beverage outlets in the market.

Minimum of 2-3 years in a similar position in a 5* property
Recognised qualification.
5* Hotel/Resort experience
International experience (would be preferred)

Strong strategic and analytical skills coupled with exceptional leadership skills
Fluent English language skills, plus any additional European languages would be an asset

Salary; the client offers a good competitive salary plus full expat package. (Single Status only)
